Nonthermostable fillings with bits of fruit and berries
These fillings are intended for bakery and confectionery products where the normal sequence of operations is to bake dough first, then to apply or insert a filling. The fillings are generally used for smearing pie shells and open-faced pies – also suitable for whipped cream-based products.
